Ingredients:
- 150 g of beets
- 150 g of tomatoes
- 150 g of carrot, celery, parsley root
- 100 g of onion
- 4 spoons of chopped parsley leaves and dill
- Lemon juice
- Salt
- Takes 1 hour
Recipe:
- Peel and wash the beets, carrot, celery, and parsley root. Grate them.
- Peel and chop the onion. Place all vegetables in a pot with hot water and cook until soft.
- Blanch fresh tomatoes with boiling water to remove the skin, then cut into cubes. For frozen tomatoes, peel and cube them directly.
- Chop the dill and parsley leaves. Add them and the tomatoes to the boiling borscht.
- Season with salt and lemon juice to taste.
The vegetarian version of Ukrainian borscht is ready to eat. You can also serve it with a hard-boiled egg or pieces of cooked, stewed, or baked meat.
