Simple Ukrainian Borscht Recipe

Chipotle sauce

Ingredients:

  • 150 g of beets
  • 150 g of tomatoes
  • 150 g of carrot, celery, parsley root
  • 100 g of onion
  • 4 spoons of chopped parsley leaves and dill
  • Lemon juice
  • Salt
  • Takes 1 hour

Recipe:

  1. Peel and wash the beets, carrot, celery, and parsley root. Grate them.
  2. Peel and chop the onion. Place all vegetables in a pot with hot water and cook until soft.
  3. Blanch fresh tomatoes with boiling water to remove the skin, then cut into cubes. For frozen tomatoes, peel and cube them directly.
  4. Chop the dill and parsley leaves. Add them and the tomatoes to the boiling borscht.
  5. Season with salt and lemon juice to taste.

The vegetarian version of Ukrainian borscht is ready to eat. You can also serve it with a hard-boiled egg or pieces of cooked, stewed, or baked meat.
