Get to know my simple recipe for waffles that are perfectly browned and crispy. You no longer have to look for a proven way to make waffle dough. These waffles literally taste like from a stand… or maybe better?!

Ingredients for Waffles

  • 2 half cups of wheat flour – 300 g
  • 1.5 cups of milk – 375 ml
  • 1/3 cup of oil – 80 g
  • 3 medium eggs
  • a teaspoon of baking powder
  • a teaspoon of sugar
  • pinch of salt

Waffles Recipe

Take out the eggs and milk from the refrigerator. You can even warm the milk slightly.

Waffle additions: powdered sugar, jam, fresh fruit, chocolate cream, whipped cream..

Crispy waffles are a great idea for breakfast or a delicious dinner. If you like waffles, I guarantee you that they will disappear in a few minutes immediately after removing them from the waffle iron. So I am cautious and always prepare the additions to the waffles in advance, so that everyone can eat a hot waffle with their favorite fruit or whipped cream right away.

Step 1: Place the components in a bowl or pot

Separate the whites from the yolks. Place the egg whites in a dry and clean metal or glass bowl. Place the yolks in the second dish. Pour slightly warm milk into the bowl with the yolks and add 1/3 cup of vegetable oil with a delicate and neutral taste. Finally, add flour mixed with baking powder.

Step 2: Mix the ingredients

Mix everything thoroughly using a mixer to obtain a smooth dough.

Step 3: Beat the egg whites

Add salt to the bowl which contains egg whites. Beat the egg whites until stiff. Start with low mixer speed and gradually increase it to maximum. When the egg whites become white and fluffy (after just a minute of beating), you can add a teaspoon of sugar. Beat the egg whites and sugar until they become perfectly white and fluffy. This will take one to two minutes. Egg white whipped with a small amount of sugar is as light as bathtub foam.

Step 4: Combine the foam with the dough

Gradually add a tablespoon of whipped foam to the bowl with the dough. Stir gently after each spoonful is added. In this way, mix in all the egg white and sugar foam.

Step 5: Fry the waffles

Very lightly grease the clean plates of the waffle iron with oil (only for the first series of waffles). Close the waffle iron and heat it to maximum power. Using a medium ladle or tablespoon, spoon portions onto designated plates in the waffle maker. The dough is quite stiff, so it should not flow beyond the heating plates. Close the waffle maker.

My waffle maker has a power of 1300 W. However, I do not know how many heating rods run through the plates. The waffle maker I use has two pockets for rectangular waffles. Each portion of waffles is ready after 4 minutes of baking.

It is very important not to open the waffle iron while baking waffles. Or at least not to do it too often, because this is one of the causes of unsuccessful baking. After the first waffles, check how much time they needed to be perfectly baked. Bake each subsequent waffle for the same time.

Useful tips:

  • Before heating the waffle maker, wash/wipe and dry the heating plates thoroughly. Then brush them with some oil. However, you only do this the first time you bake the waffles. You don’t need to grease the waffle maker for subsequent pieces.
  • It is very important not to open the waffle iron too often while baking waffles. Just like we don’t open the oven when baking a cake. The temperature should not change rapidly and the waffles should not evaporate too much, because this way you lose the ideal pressure between the heating plates.
  • Always bake waffles until lightly browned. Every waffle maker is different, so you need to know your equipment well. Some waffle makers have smaller cubes between the heating plates, others will need more dough.
  • Always bake waffles immediately after preparing the dough, because over time the dough loses air bubbles that were formed when whipping the egg whites into foam.
  • If you do not plan to eat the waffles immediately after taking them out of the waffle iron, it is necessary to place them on a baking rack. Then they will retain their crispness and will not become soft. If you place hot waffles immediately on a plate, they will start sweating from the bottom and will certainly soften.
  • Always put your favorite additions before eating the waffles. If the waffles are left for a longer time with a layer of whipped cream or fruit juice soaked into them, they will also become soft.
