A fragrant orange cheesecake perfect for preparing in winter. Cheesecake with a short crust base, with a delicious, creamy cheese filling and wonderful jelly. Such a royal dessert can be prepared as a winter treat or even as one of the Christmas cakes.
Ingredients for the shortcrust base
- 150 g digestive oat cookies
- 50 g butter
- teaspoon of cinnamon
Ingredients for the cheese mass
- 500 g of ground cottage cheese from a bucket
- 250 g of mascarpone cheese
- 1 Winiary transparent jelly
- 250 ml of boiling water
- 150 ml of cream 30%
- 2 tablespoons of sugar
Ingredients for citrus syrup
- 1 lemon
- 1 small orange
- half a grapefruit
- 3/4 cup of sugar
- 3/4 cup of water
- Ingredients for citrus jelly
- citrus slices with syrup
- 1 Winiary transparent jelly
- 400 ml of boiling water
Start preparing the cheesecake the day before. First, you need to prepare citrus slices in sweet syrup. Thanks to this treatment, the citrus fruits will be soft and sweet. The jelly will set easily.
Wash and scrub the fruit very thoroughly. Cut them into thin slices. It’s totally up to you to keep the skin or cut it off. Make sure you keep water and sugar in the same small pot. Cook the syrup for 20 minutes until the sugar dissolves and the syrup thickens slightly. Place all slices carefully in the syrup. Mix all ingredients and cook them for 10 minutes on low flame. Place the citrus slices together with the syrup into a large jar. After cooling, place in the refrigerator overnight.
Prepare the cheesecake tin. For me it was a cake tin with a diameter of 22 cm. With the help of baking paper please line the button and sides of the cake. I recommend greasing the sides with butter beforehand. Then you can easily stick a strip of paper to them. It is important that the paper is higher than the sides of the cake tin. The cheesecake is tall and the jelly will probably need more space. It totally depends on you whether you place the cake in a small or large tin.
To make a cookie base, simply grind the cookies in a blender or crush them into sand in a plastic bag using a rolling pin 🙂 Mix the soft or melted butter and cinnamon with the cookie crumbs. Line the bottom of the cake tin with the loose mixture. Use a spoon to form cookies. Place the mold in the refrigerator.
Preparing the cheese mass for cheesecake is equally simple and quick. Boil a glass of water – 250 ml. Pour the contents of one package of Winiary grape-flavored transparent jelly and mix until the gelatin is completely dissolved. Set aside to cool. Place cottage cheese (Piątnica or Mlekovita is best) and mascarpone cheese in a large bowl. Mix the cheeses vigorously. Whip the well-chilled cream with sugar for five minutes. The cream should thicken and the sugar should dissolve completely. Pour the cooled jelly into the cheese mass. Mix everything for a while and then add the whipped cream and mix the mixture well.
Take the form with the town base out of the fridge. Pour the cheese mass into the form. Level the surface. By using transparent jelly in the mass, you will maintain the pristine whiteness of the cheesecake. Carefully place the mold with the next layer back in the refrigerator. The mass will set while you prepare the last layer.
To make jelly with citrus fruits, you need to boil 400 ml of water. Pour one transparent jelly into it and mix again until the gelatin is completely dissolved. Set the jelly aside to cool completely. When the jelly cools down, take the jar of citrus in syrup and the cheesecake tin from the fridge. Fish out the slices. Remove excess syrup with a spoon. Place the citrus slices next to each other on the partially stiff cheese mass.
Pour a few spoons of jelly over the fruit. Place the form in the fridge for 20 minutes. This makes the fruit set together with a thin layer of jelly. There is a risk that after pouring all the jelly at once, the fruit would float above its surface. However, I want them to lie on the cheese mass. Then they look wonderful… as if submerged under a sheet of ice. 🙂 After 20 minutes, you can pour out the rest of the jelly and very carefully place the finished cheesecake in the fridge. This time for the last 4 hours until it is completely set.
What to do with citrus syrup?
I add cloves to the syrup while cooking. The syrup can be used to sweeten tea… I recommend it!
