No-bake Oreo cheesecake

It’s here… everything you asked for in one. A no-bake cake that can be made within a few hours and with Oreo cookies. Cold Oreo cheesecake with frozen berries is a great dessert for any occasion.

Ingredients for the base

  • 12-15 pieces of Oreo cookies (I used 12)
  • 2 tablespoons melted butter

Ingredients for the dark cheese mass

  • 250 g of ground cottage cheese from a bucket
  • 250 g of mascarpone cheese
  • 100 g of blueberries (I used frozen)
  • 2 tablespoons of powdered sugar
  • 2 flat tablespoons of gelatin
  • 100 ml of water
  • purple food coloring (not necessarily)

Ingredients for the light cheese mass

  • 200 g of vanilla cheese
  • a bag of lemon jelly
  • 300 ml of boiling water

Ingredients for decoration

  • 10 Oreo cookies
  • 200 g of cream 30%
  • a spoon of powdered sugar
  • No-bake Oreo cheesecake

Bottom

Line the bottom of a cake tin with a diameter of up to 26 cm with baking paper. Crumble the cookies into fine powder in a food processor or with a rolling pin through foil. In a bowl, mix them with melted butter. Line the bottom of the springform pan with the sticky but crumbly mass. Place the mold in the fridge.

Dark cheese mass

Place the gelatin in a small pot with water and heat slightly until it dissolves completely. Don’t cook. If you have food coloring, add a little of it to the dissolved gelatin. Mix and set aside.

Place the cheese from the bucket, mascarpone, powdered sugar and frozen or thawed berries (mine were still frozen) in a bowl. Blend everything until smooth. Add slightly cooled gelatin. Mix well and pour most of it onto the cookie base. Leave some of the cheese mixture at the bottom of the bowl. Place the tin of cake in the fridge for a while.

Light cheese mass

Put the vanilla cheese into the bowl with the remaining dark cheese mixture. In a separate bowl, pour 300 ml of boiling water over the lemon jelly and stir until the gelatin dissolves. You can pour the jelly into a cold container to cool it down faster. After a few minutes, slowly pour the still warm, but not hot, jelly into the bowl with the vanilla cheese. Mix everything well.

The mass will be thin and the remains of the dark mass will give you a nice, heather shade. Pour the mass onto the already set, purple cheese mass. Put the cake in the fridge once again.

Decoration

It is best to pour the cream into a glass container first. Place the cream in the ice cream to cool well.

Before decorating the cake, take the cream out of the fridge and start whipping it with a mixer. First at low speeds, then gradually increase the power. After a few minutes it should be very stiff. Add powdered sugar and beat for another two minutes.

Place the whipped cream in a pastry bag and squeeze round clouds onto the cheesecake. Place Oreo cookies on the larger ones.

Keep the cheesecake in the fridge.

You can make such a cake for any occasion… birthday, party with friends, baptism or communion.
