Mustard sauce

Try my recipe for the perfect mustard sauce. Combine eggs, vegetables and meat to make a spicy mustard sauce.

Ingredients of spicy mustard sauce

  • Two tablespoons (up to 40 g) of Dijon or Sarepta mustard
  • Two tablespoons (about 40 grams) of butter
  • A tablespoon (15 g or more) of plain flour
  • 250 ml of vegetable broth and a glass of freshly ground pepper

Step 1: Prepare the roux.

Put two large tablespoons of real butter into a pot or small saucepan. Gradually melt the butter over a heat just above low. Mix with 1 tablespoon of wheat flour. Use flour to make a sufficiently thick dough. Fry the flour and butter for a while until a light roux forms.

Step 2: Top up the sauce

After some time, add 250 ml or one glass of chicken or vegetable broth. Quickly add a pinch of pepper and two tablespoons of spicy mustard. Increase the heat of the burner and stir constantly to mix and combine the sauce ingredients. The sauce will become smoother and thicker with every minute, even though initially you thought it would be too thin and uninteresting.

If you combine all the ingredients in a pot, you can use a giraffe hand blender to blend everything if you like such techniques. This takes a few seconds at most. You can then use a spoon to skim off the foam. Wait less than a minute for the sauce to come to a boil before turning it off. This time the mustard sauce is ready.

Step 3: Present in your preferred way

The amount of ingredients is enough for approximately 270 ml of sauce. Although I don’t add salt to this sauce, you can do so if you need to. The mustard sauce will be thinner than the pudding while still hot, but will thicken as it cools. Fish and meat will taste fantastic with warm sauce. In the photo, two slices of pork tenderloin are fried over high heat without any spices. Before adding the pork tenderloin to the pan, I only add a small teaspoon of vegetable oil. A minute on one side and a minute on the other!

Mashed potatoes, asparagus and green beans are prepared vegetables that go well with a warm mustard sauce. It can be safely stored in the refrigerator and served cold. If you want spicy horseradish sauce, replace the mustard in the ingredients with horseradish.
