Knedle Dumplings with Poppy Filling Recipe 

Sauerkraut Soup | Knedle Dumplings 

Ingredients for Knedle Dumplings 

 For the Dough 

  •  125 ml of milk 
  •  70 g of sugar 
  •  20 g of yeast 
  •  250 g of wheat flour 
  •  100 g of butter 
  •  A pinch of salt 
  •  1 egg 

 For the Filling 

  •  80 g of poppy seeds 
  •  10 g of sugar 
  •  20 g of adulation 
  •  1 egg thralldom 

 For Serving 

  •  Candied cream or sweet yogurt( or fruit sauce) 
  •  Fruit slices( blueberries, strawberries,etc.) 

Instructions 

 1. Prepare the Yeast Mixture 

  •  Pour half a mug( about 125 ml) of milk into a pot and add 1 tablespoon of sugar. 
  •  Warm the milk gently on the cookstove. 
  •  Crush 20 g of yeast and mix it with the warm milk. 
  •  Add 1 teaspoon of flour to the admixture, stir well, and let it sit in a warm place covered with a cloth. 

 2. Make the Dough 

  •  In a clean coliseum, combine the remaining flour. 
  •  Add 50 g of melted butter, a pinch of swab, and nearly all the remaining sugar. 
  •  Mix these constituents together with the flour. 
  •  Add the milk and yeast mixture to the flour mixture. 
  •  Break an egg into the coliseum and blend thoroughly. 
  •  Knead the dough by hand until it becomes smooth and invariant. 
  •  Cover the dough with a clean cloth and let it rest for 20 minutes. 

 3. Prepare the Filling 

  •  Mix 80 g of poppy seeds with 10 g of sugar, 20 g of butter, and one egg yolk. 

 4. Shape the Dumplings 

  •  After the dough has rested, it should have risen slightly. 
  •  Divide the dough into balls about 34 cm in diameter. 
  •  Flatten each ball and place 1 teaspoon of poppy stuffing in the center. 
  •  Fold the dough over the stuffing and seal it, forming a smooth ball. 
  •  Roll the dumpling gently in your hands to ensure a uniform shape. 
  •  Cover the set dumplings with a dry cloth and let them rest for another 20 minutes. 

 5. Cook the Dumplings 

  •  Prepare a pot with a lid, adding enough water to reach a height of 12 cm. 
  •  Add 30 g of butter, a pinch of salt, and the remaining sugar. 
  •  Bring the water to a boil. 
  •  Place the dumplings in the pot, cover with the lid, and reduce the heat slightly. 
  •  Cook the dumplings gently for 15 minutes. 

 6. Serve 

  •  Transfer the cooked dumplings to plates. 
  •  Pour sweetened cream or sweet yogurt over them, or use fruit sauce. 
  •  Garnish with slices of fruits like blueberries or strawberries. 
  •  Optionally, pour some fruit juice or prepare a fruit sauce by thickening a fruit compote with potato starch.
