Dutch Baby Recipe
Step 1: Choose a baking dish
A cast iron frying pan with a diameter of 23-24 cm works best for fried pancakes; it should not have wooden handles or other elements that are not intended for baking in the oven. As a last option, you can use a tight baking tray (without removable sides) or another heat-resistant dish, e.g. ceramic.
Step 2: Prepare the pancake dough
You can now start preheating the oven. Place the rack or thin baking tray from the oven accessories on the middle shelf or lower on the floor. Transfer the pancake mixture to a baking dish. Using the top/bottom baking option, set the temperature to 220 degrees.
I combined all the ingredients for the pancake dough in one bowl using a vacuum blender. Crack in three large or four small eggs. Add 150 milliliters of milk, 100 grams of wheat flour, a tablespoon of vanilla extract or sugar and a pinch of salt. Mix all ingredients until a smooth dough is formed. If necessary, transfer them to a shallow dish.
Step 3: Fry the pancake.
Patiently wait for the food to heat up intensively in the oven. The oven should preheat to the desired level. Put on extremely thick oven gloves, prepare a spoon of clarified butter and, if necessary, a brush. Always have a bowl of pancake mix on hand. Open the oven carefully and efficiently.
Gently pull out the drawer containing the hot dish. Pour in the butter and use a brush to spread it around the edges. Pour all the pancake batter at once, place the pan inside and close the oven to maintain the temperature.
This is how a Dutch baby should bake for 20 minutes. Typically, the pancake will begin to expand significantly halfway through baking. It then grows completely evenly or irregularly, forming a powerful mushroom. After 20 minutes of baking the pancake, turn off the oven and remove it immediately. Within a few minutes, it will gradually begin to fall, making room inside for the delicious toppings.
Helpful tip: You can preheat the oven and cookware independently if your cookware is also suitable for heating on the stove. Place the pot on the burner and preheat it very aggressively once the stove has finished preheating.
Add the butter and spread it only in the heated dish. After pouring the pancake batter, quickly place the dish in the preheated oven. Bake for twenty minutes.
Step 4: Decorate with your favorite toppings.
The sweet version of Dutch Baby can be served cold or hot. Below is a photo of an oven-baked pancake with canned peaches, raspberries, mascarpone and powdered sugar. The pancake can be safely transferred from the pan to a plate, where it can be divided into four smaller halves.
