Chruściki, faworki, chrusty, or angel wings are typical donuts made in Poland during the carnival season until Fat Thursday.
Ingredients for Chruściki
- 4 cups all-purpose flour, sifted
- 1 teaspoon of baking powder.
- Five egg yolks.
- 6 Tbsp thick cream
- 2 tablespoons butter
- 1 teaspoon of sugar.
- 2 pinches salt.
- 1 tablespoon of your preferred alcohol (or white vinegar).
- 4 cups vegetable oil.
- Icing sugar, or sugar (to sprinkle)
Instructions
On a work surface, combine the baking powder, sugar, and flour.
Make a well in the center, then add the eggs, cream, salt, butter, and alcohol.
Knead for approximately 10 minutes, or until the dough is smooth and homogeneous.
Wrap the dough in plastic wrap and let it rest for 2 hours at room temperature.
Roll the dough to a thickness of ⅛ inch (6mm) (or thinner for crispier chruściki) on a lightly floured surface. If the dough sticks too much, add 1 to 2 teaspoons of flour.
Using a pastry wheel or knife, cut rectangles about 2×1 inch (5 x 2.5 cm) and make an incision in the center of each. Take each rectangle and expand the incision to relocate one of its two smaller sides.
Deep fry chruściki in 350 F / 170 C oil, flipping halfway through, until golden brown (approximately 1 minute per side). Fry a few pieces at a time to avoid overcrowding.
Drain and place on a plate lined with paper towels. Roll in either powdered sugar or sugar.
