Carrot and pineapple salad Ingredients

  • Carrots – 3 pieces
  • Pineapple (canned) – 4 discs
  • Apples – 1 piece
  • Sugar (can also be honey) – 1 teaspoon
  • Lemon juice – 1 teaspoon
  • Cream (or natural yogurt) – 2 tablespoons
  • Salt – to taste

Carrot and pineapple salad Preparation

  • Remove the skin from the carrot and finely grate it. Peel the apple, core it and grate it, preferably using a medium or coarse grater. Cut the pineapple into small cubes.
  • Mix carrots with fruit, add sugar (or honey), lemon juice and cream or natural yogurt. If you have leftover pineapple brine, you can add a teaspoon. Season everything with salt.
  • Serve carrot and pineapple salad with dinner. It is also a good idea to serve it for a sweet and healthy afternoon snack.
