Pancakes with strawberries

Recipe for pancakes with strawberries and whipped cream. Such pancakes are a great idea for breakfast and lunch. Perfect pancake batter, homemade whipped cream and fresh strawberries!

Ingredients for pancake dough

  • 1 full glass and 2 tablespoons of wheat flour
  • 3 medium eggs
  • 1 cup of milk
  • 1 glass of water – plain or carbonated
  • 4 tablespoons of vegetable oil
  • pinch of salt

the other ingredients

  • 500 g of strawberries
  • 1 cup of cream 30%
  • 2 tablespoons of fine sugar

To make these delicious pancakes with strawberries and whipped cream, I used my proven recipe for pancake dough.

Pancakes with whipped cream

Mix all the ingredients for the pancakes in one bowl until smooth. If you used eggs and milk straight from the refrigerator, set the dough aside for an hour to rest. Stir the dough before frying the pancakes.

Heat a flat frying pan with a diameter of 24 cm. Set medium power and wait until the heat is distributed evenly over the entire usable surface of the pan. Don’t grease the pan with anything.

Use a small ladle to measure the portion for the pancake. Pour just enough dough into the pan to cover the surface of the pan. Each time I pour a portion onto a pancake, I raise the pan over the burner. I immediately move the pan so that the dough spreads over the entire surface. Pancakes should be thin. You can even pour excess dough back into the bowl each time.

After about 40-50 seconds, turn the cake over to the other side. The other side usually needs half as much time. This is where a flat spatula for flipping pancakes may come in handy. Fry all pancakes this way.

Put and keep the highly chilled cream in a tall & thin container. You can place the mixer paddles in the freezer for a few minutes to cool them down as well.

Start whipping the cream with low speed so as not to splash the thin cream all over the kitchen. Gradually increase the power of the mixer until it reaches maximum. After beating for a minute, add a spoonful of sugar. After another minute, add the second spoon. Whip the cream at high speed until the sugar is completely dissolved. The cream should be stiff and fluffy.

Wash the strawberries and remove the stalks. It depends upon you to cut them into larger or smaller pieces as per your wish. You can mix the strawberries with whipped cream or arrange them on a plate or on top of the whipped cream.

I take the fried pancakes one by one, catch them in the middle with two fingers and lift them up. The pancake then looks like a long skirt. This way I arrange them one next to the other on the plate.

I put dollops of whipped cream and halves or quarters of strawberries on the pancakes. Delicious pancakes with strawberries and whipped cream are ready to eat. You can also decorate the pancakes with fresh mint leaves.
