Oven fries

Oven fries are a really tasty and popular snack. You can successfully prepare baked fries at home. They come out wonderfully crispy and are really delicious.

  • A kilogram of flour potatoes type C or possibly type B
  • Powdered sugar (1 flat tablespoon) is enough to moisten the sliced potatoes
  • Two tablespoons of neutral frying oil with a high smoke point and spices: Half a teaspoon of sweet pepper, Provençal herbs and salt

My glass is 250 milliliters. The potatoes were weighed before peeling.

The basis for calculating calories were the ingredients I used. Since your ingredients may have different calorie counts than the ones I used, this is just a calorie estimate. I managed to make about 900 grams of fries from the materials provided.

Choosing the right potatoes is the first step in preparing the best baked fries. Type C potatoes, or flour potatoes, are my favorite because they have a higher starch content and produce the tastiest fries. These potatoes produce a soft interior and a caramelized, crispy exterior when used for fries.

Oven fries

Peel and wash a kilogram of potatoes thinly. In my case, that meant eight medium potatoes. Cut each potato into sticks and cut them lengthwise into pieces 1.5–2 cm thick. The fries you make at home will have uniform cooking and diameter.

After draining, place the fries in a container with cold water (directly from the tap). When more water is poured into the bowl, rinse the potato sticks. I often rinse them three or four times until the water runs clear.

Finally, I add very cold water to the bowl containing the potatoes when the water is clear (no potato starch is floating in it). I also mix the potatoes with water and sugar for a while after adding a flat spoon of powdered sugar. Give the dish about half an hour to rest.

Tip: Rinse the potatoes thoroughly to remove the starch on the top layer – a complex sugar that helps potatoes retain moisture. This will make the outside of the fries extra crispy. The fries will brown more attractively and have an even crispier consistency thanks to the sugar (sucrose) content in the water.

Once the fries have been cooked for about 40 minutes, you can drain all the water and rinse them thoroughly under cold running water (preferably using a colander). Spread the chips on a fresh paper towel or cotton cloth. Make sure the fries are completely dry. They should be matte and completely dry.

Is the oven already preheated? Preheat the fan to 200 degrees and set the temperature. Thanks to the convection function, the moisture from the potatoes will quickly evaporate (the crispier the fries, the less water they require). If your oven does not have this function, set the temperature to 220 degrees and bake from the top or bottom.

Drain the fries and place them in a large bowl. Add the spices after adding two tablespoons of oil for frying. For me it was sweet pepper, Provençal herbs and half a teaspoon of salt. However, you can use your preferred spice blend or add just salt. Mix the fries thoroughly with oil and spices.

Place parchment paper on a large baking tray, preferably one taken out of the oven. Place the seasoned and fattened potato sticks on a baking tray. Make sure the fries are arranged so that they are not stacked on top of each other. Ideally, you’ll want to be able to keep the gap between them as small as possible.

Once the chips are baked, place the baking tray in the preheated oven. I decide to place the tray with the fries in the middle of the oven or even slightly lower to avoid baking from the top too quickly. It took me fifty minutes to bake the fries.

After 20 minutes, I relented and turned them over. The fries were cooked in just forty minutes, although I could have baked them a little longer if I had left them in the oven longer. I strongly advise you to observe the appearance of the fries after ten minutes of baking.

The type of potatoes used, the thickness of the fries and the temperature of the oven cavity may affect the baking time of the potatoes. If you use the top/bottom baking option, it is even more important to open the chamber periodically to remove moisture from the oven. Baked fries can be removed from the oven and served hot.
