The traditional Polish dish known as latkes consists of potato hash browns that are accompanied by applesauce and sour cream and are served during the Jewish festival of Hanukkah.
Latkes Ingredients
- The sour cream is for you.
- 10 ounces of thick cream
- buttermilk (or fermented milk) to the extent of one tablespoon
- The applesauce is for you.
- Five apples
- a quarter of a cup of sugar
- One-half cup of apple juice
- 100 milligrams of cinnamon
- There are three entire cloves.
- a handful of raisins (although this is optional).
Regarding the latkes
- Six potatoes;
- 1 grated onion of a big size
- Two eggs
- 3 tablespoons of matzo meal (or white flour, if you like)
- One milligram of salt
- To taste, pepper; pepper
- Oil made from vegetables (for frying)

The sour cream
The sour cream should be prepared the day before, or ideally two days before, if possible.
A double boiler should be used to bring the heavy cream up to a temperature of 180 degrees Fahrenheit (82 degrees Celsius).
Allow the cream to reach room temperature before proceeding.
Add the tablespoon of buttermilk or fermented milk to the mixture that has been poured into a glass jar that has a lid that can be used to close it. Make a stir.
In order to prevent the jar from being sealed and allowing gas to escape, cover it with a cloth or towel that is relatively thick.
For a period of twenty-four to forty-eight hours, store at room temperature.
Finally, place the lid of the jar on the jar and place it in the refrigerator.
In the refrigerator, sour cream can be stored for two to three weeks.
Compote and apple
Remove the cores, peel the apples, and cut them into quarters. The sugar, spices, and apple juice should be placed in a saucepan with the ingredients.
Maintain a simmer for around fifteen minutes while stirring.
In order to ensure that the apples are soft and to stop the cooking process, poke them. Take out the fresh cloves.
You can make a chunky applesauce by crushing the apples with a fork, or you can make a smooth applesauce by blending the apples. You can add raisins if you like. It’s cool.
Lattices
Potatoes should be peeled, washed, and dried.
Grate them and press them through a fine sieve or fine cheesecloth to get rid of most of the moisture.
Then add all other ingredients and mix well to obtain a homogeneous consistency.
Heat the cooking oil in a pan. Shape shredded potato pancakes and place them gently into the frying oil with a slotted spoon.
Cook over medium heat for about 10 minutes, turning halfway through cooking so they are golden brown.
Place the latkes on a paper towel and serve immediately.
